Spanish Chicken & Potatoes

Ingredients
900g (32oz) white potatoes
2 onions
2 red (bell) peppers
2 tbsp olive oil
500g (18oz) diced chicken breast
2 heaped tsp garlic paste
20g (2 heaped tsp) sun-dried tomato paste
2 × 400g (14oz) can chopped (crushed) tomatoes
1 chicken stock cube
1 tbsp sriracha hot sauce
2 tsp smoked paprika
2 tsp sugar
80g (3oz) baby spinach leaves
Directions
Step 1
Peel and chop the potatoes into 2cm chunks. Peel and roughly chop the onion. De-seed the peppers, halve, then slice into thin strips.
Step 2
Bring a large saucepan of salted water to the boil. Add the potatoes and cook until just tender, 12–15 mins. Drain.
Step 3
Heat the olive oil in a large frying pan over a medium-high heat. Add the chicken and peppers. Season with salt and pepper. Cook until browned all over, 5–6 mins.
Step 4
Add the garlic and sun-dried tomato pastes. Stir-fry for 30 seconds. Stir in the chopped tomatoes and 3 tbsp (50ml) water. Crumble in the stock cube. Add the sriracha, smoked paprika, and sugar. Simmer for 4–5 mins, until the chicken is cooked through, adding a touch more water if needed.
Step 5
Stir in the spinach a handful at a time until just wilted, 1 min. Add the cooked potatoes and stir through.
Step 6
Divide between bowls and serve immediately.
