Recipe: Sausage & Bean Hot Pot (ready in 25 mins)

Some dinners are about as glamorous as an old pair of slippers — and just as reliable. This Sausage and Bean Hot Pot is exactly that: sausages, spuds, beans and a rich tomatoey sauce, all in one pan and ready in 25 minutes.
Sausage and Bean Hot Pot
SERVES 4 // READY IN 25 MINS // 504 CALS
INGREDIENTS
2 tsp cooking oil
4 good quality pork sausages
2 shallots
2 red (bell) peppers
600g (21oz) new potatoes
8 tomatoes
2 heaped tsp garlic paste
4 tbsp tomato paste
2 tsp sugar
2 tsp Worcestershire sauce
2 x 400g (14oz) can cannellini beans
METHOD
STEP 1
Heat the oil on a med-high heat in a large lidded pan.
Cut the sausages into chunks (tip: use kitchen scissors).
Once hot, add the sausages to the pan and sizzle for 2-3 mins, until just starting to brown.
STEP 2
Peel and chop the shallot. De-seed and slice the red pepper. Quarter the new potatoes.
STEP 3
Turn the heat under the pan down to low. Add the shallot, red pepper and new potatoes. Stir-fry for 1 min, before adding 50ml (3 tbsp) water. Put the lid on the pan and steam slowly for 10 mins.
STEP 4
Roughly chop the tomatoes.
Remove the lid from the pan and turn the heat up to med-high. Add the garlic and tomato pastes and stir-fry for 30 secs.
Add the tomatoes, sugar and Worcestershire sauce and cook for a further 3-4 mins, until the tomatoes are starting to break apart.
STEP 5
Add the cannellini beans with their water and simmer for a further 5 minutes.
Share between your bowls.
