Pork Chilli Burrito Bowl — easy, tasty... not boring
A quick bowl of smoky pork, rice and salsa. Simple, satisfying, and weeknight-friendly.

Pork Chilli Burrito Bowl

I make this one a lot when I want something easy but not boring. It’s fast, a bit spicy, and somehow always feels like more effort than it was. The smoky chipotle gives it proper flavour, and the quick tomato salsa keeps it fresh. Nothing fancy — just the kind of dinner you look forward to halfway through the day.
Pork Chilli Burrito Bowl
SERVES 4 // READY IN 15 MINS // 512 CALS
INGREDIENTS
240g (1 cup) basmati rice
500g (18oz) minced (ground) pork 5% fat
2 tbsp tomato paste
4 heaped tsp chipotle paste
2 heaped tsp garlic paste
2 tsp sugar
2 tsp vegetarian stock powder
4 tomatoes
2 tsp olive oil
2 tbsp cider vinegar
60g (2oz) cheddar cheese
METHOD
STEP 1
Boil a half-full kettle.
Rinse the rice before adding to a large saucepan. Pour in boiled water, so you have approximately double the amount of water to rice.
Bring to the boil and simmer for 10-12 minutes (lid on).
STEP 2
Heat a large frying pan on a med-high heat.
Once hot, add the minced pork. Season generously with salt and pepper. Fry until the mince has browned, 5-6 mins, breaking it up as it cooks.
STEP 3
Turn the heat down to low, then stir in the tomato, chipotle and garlic pastes. Add the sugar.
Add 100ml water and the stock powder, then simmer for 3-4 minutes.
STEP 4
Meanwhile, roughly chop the tomatoes and put in a small bowl. Add the olive oil and cider vinegar. Season with salt and pepper, stir and set aside.
Grate the cheese.
STEP 5
Share the rice between your bowls.
Top with the pork chilli, tomato salsa and grated cheese.
