Pork & Shiitake Stir Fry - quick, light and full of flavour
Tender pork, earthy mushrooms and noodles in a tangy sauce. Dinner done in 15 minutes.
Monday again? Fine. Let’s at least give ourselves something good to eat while we cope.
Pork & Shiitake Mushroom Stir Fry

I make this when I want something quick but not boring. The pork cooks fast, the mushrooms add a bit of depth, and the sauce has that nice mix of tangy and spicy without being over the top. It’s light but filling, and the rice noodles make it feel like proper dinner without the faff.

Pork & Shiitake Mushroom Stir Fry
SERVES 4 // READY IN 15 MINS // 490 CALS
INGREDIENTS
180g (4 nests) rice noodles
4 pork loin steaks, approx 125g each
2 red onions
2 green (bell) peppers
240g (8oz) shiitake mushrooms
2 tsp cooking oil
2 tsp vegetarian stock powder
1 tsp chilli powder
2 heaped tsp ginger paste
4 tbsp rice vinegar
4 tsp tomato ketchup
2 tsp tomato paste
4 tbsp soy sauce
METHOD
STEP 1
Place the noodles in a large bowl, cover with boiling water and stand for 3 mins. Rinse in cold water and drain.
STEP 2
Trim the pork steaks and cut into strips.
Peel and quarter the red onion. Deseed the green (bell) pepper and cut into thin slices. Wash the shiitake mushrooms and cut into quarters.
STEP 3
Heat the oil in a large frying pan on a high heat. Once hot, toss in the pork strips and fry for 4 mins before adding the red onion and green (bell) pepper.
Stir-fry for 4 mins. Season with salt and pepper.
Add the mushrooms to the pan and stir-fry for a further 3 mins. Turn the heat to low.
STEP 4
In a small bowl, combine the sauce ingredients - stock powder, chilli powder, ginger paste, rice vinegar, tomato ketchup, tomato paste and soy sauce. Add 2 tbsp water and stir to combine.
STEP 5
Stir the sauce into the pork and veggies and cook gently for 2 minutes. Add the noodles and cook for 1 more minute.
Share the stir-fry between your serving bowls.
